The morning shift relies on you to make their very busy shift a success, so please don't be in a big hurry to get out of here at night. If not, refill Wipe down the doors of the condiment counter Ice Cream Windex and wipe down the whole ice cream cabinet Take ice cream scoops and containers upstairs to be washed Put plastic lids on the ice cream tubs after washed Wipe down the ice cream cart Re-stock spoons, napkins, cups as needed Check ice cream levels. Is there at least (2) scoops in the container? If not, empty in clear cup and toss the container. Make sure to take the sticker off the glass. CLEANING - BATHROOM Use Clorox Spray or disinfectant wipes on sink and toilet seat (lift seat also) Empty garbage on Wednesday closing (unless really full) Clean mirror with Windex and dry paper towel (no streaks) Replace toilet paper and paper towels if necessary Clean toilet with toilet cleaner and scrub with toilet brush Clean all porcelain with Clorox or disinfecting wipes Wipe down front of vanity and shelves Check hand soap, replace if necessary Dust light and window sill and shelf Sweep and mop TABLES / /CHAIRS / STEPS GO UPSTAIRS AND WIPE DOWN TABLES ...especially by the window Windex front door glass (inside and out) both doors Windex bakery case (do not spray inside case, spray rag) Shake out rugs outside (seasonal) Wipe down pew upstairs Wipe down leather chairs upstairs Sweep upstairs and mop Sweep stairway and landing, mop Sweep downstairs and under tables, mop Are you sure you wiped down the tables upstairs? TRASH / RECYCLE Empty Serving Area garbage- end of night Empty Condiment Counter Garbage - end of night Empty Upstairs garbage - end of night Empty outside garbage - end of night ARE YOU SURE YOU EMPTIED OUT THE OUTSIDE GARBAGE? Break down any boxes upstairs and take out to recycle. There should be NO empty boxes left in the kitchen at the end of the night. Empty dog bowls WEDNESDAY CLOSE - TAKE OUT BATHROOM GARBAGE BAKERY Take leftovers off platters Take platters off counter and wipe down counter. Wipe down platters with damp cloth. No stickies left on there Wrap all bakery so it is completely sealed with plastic wrap Document what was left over for morning shift. Put old bakery to $1.00 for morning, set on counter with sign. STOP.....Did everything get documented? Are you sure? Miscellaneous Before Store Closing Drizzle tips clean and clear Is coffee weighed out for morning? Start Dishes Lock door at top of stairs Make sure all windows are closed Open all blinds upstairs Open ice chest and wipe down inside cover Wipe down top of coffee grinder Wipe down top of coffee brewer 5pm-5:30pm - Start taking down one side of the espresso machine Store Close Close and lock door. Flip sign to closed Close all blinds downstairs. Unplug panini press Scrape panini with brush to get loose crumbs Catch all tray goes upstairs to be washed and sanitized Back flush remaining machine with Cafezia and then water Soak portafilters, baskets, dispersion screens in Cafezia...20 MINUTES!!! Rinse portafilters, baskets, dispersion screens with water Take everything off the top of the machine and wipe down. Rinse gray grates Wipe down the machine DO NOT TURN OFF ANY LIGHTS ON THE ESPRESSO MACHINE Wipe down all counter tops. Move grinders, get behind them. All counters should be coffee ground free and not sticky Empty espresso grinders Purge any beans that are leftover and dust everything off Wipe hoppers out with a DRY rag. Get oils off Reassemble grinders and turn off Dump any brewed coffee and wash airpots. Return airpots downstairs, opened to air dry with stems Finish all dishes Turn off display case lights Take all rags upstairs and hang to dry Empty buckets under both sinks Dishes to be washed upstairs Blenders and tops Half-n-half carafe All milk pitchers from the fridge Spoons and spoon holders Cup for grinding beans Cups/mugs/shot pourers from espresso machine Thermometers (do not submerge, just wipe off) All airpots (do not submerge, srcub with long brush, wipedown outside) Container for bleach rag Water cups and spoons Catch all tray from panini Plates, knives or forks from customers Dishes that can be rinsed downstairs Tamp mat Grey grates on top of espresso machine Tamp Grate from espresso machine Catch trays from grinders Cash drawer and safe Count cash drawer. Enter in the system Subtract 250 to find out your deposit amount Deposit, receipt tape and cash drawer form goes in your paper envelope. This goes in the safe. DATE YOUR ENVELOPE!!! Count safe upstairs in room and document on safe log Make sure the safe is closed and locked Make sure employee door is closed and locked. And lastly.....MAKE SURE TO.... Unplug panini grill Turn off espresso grinders Turn off blenders....DO NOT UNPLUG Turn off bakery case light Turn off music and TV Sweep/Mop serving area floor DO NOT UNPLUG DRIP BREWER OR TURN OFF All lights off Clock out Lock door on the way out.....HAVE A GREAT NIGHT!!
